Small Microwave Pizza in Minutes

This is a quick little pizza with favorite toppings that you can prepare in you microwave in minutes.

The crust:

Obtain one Fajita size (~6” in diameter) flour tortilla

On a cutting board use the point of sharp knife cut tiny slits all over the tortilla surface. (This will keep bubbles from forming under the surface of the tortilla and keep it flat.)

Place the tortilla on a flat plate and microwave it 35 seconds on high.

Turn the tortilla over and microwave it again for 30 seconds on high. (The tortilla should now be hard. These time are for a 1200 Watt microwave.  If your microwave has less power, more time might be needed.)

Let cool.

Ingredients:

Spread the tortilla with the thin coating of your favorite prepared spaghetti sauce.

Cover the tortilla with your favorite cooked ingredients. (Unless the ingredients are normally eaten raw, they will have to be pre-cooked because there won’t be sufficient time in the microwave to cook them.)

Sprinkle your favorite shredded cheese over the other ingredients.

Final microwaving:

Return the tortilla covered with the ingredients and cheese to the microwave on the plate and microwave on high for 35 to 40 seconds or until cheese is melted.

My favorite ingredients:

I use my favorite Ragu spaghetti sauce.  I like vegetarian pizzas so I use small pieces of onion, bell pepper, and tomato on my little pizzas. Before putting them on the pizza, I cut the onion, bell pepper, and tomato into small pieces – keeping the tomato pieces separate initially.  I like to soften the pieces of onion and bell pepper so I place them in an iron skillet, spray them with olive oil, and cook on high heat for 2 to 3 minutes while stirring to soften them somewhat. (You can decide how soft you want them.) After applying sauce I spread the pieces of onion, bell pepper, and tomato on tortilla. I then shake on bits of dried minced garlic and then cover everything with shredded mozzarella cheese before the last microwave session.  (I usually prepare more of the onion, bell pepper, and tomato mixture than I need for one pizza.  I store the extra mixture in the refrigerator for use in making additional pizzas during the week.)
