Crazy Crunchy Guacamole Recipe

I love the guacamole served at my favorite Mexican restaurants. I have tried my recipes trying duplicate the that experience at home without much success. After using up numerous avocados in the process I finally decided to come up with my own recipe with some of my favorite ingredients. Some will argue that it’s not not really guacamole, but I figure that since I developed the recipe, I get to name it.

Ingredients:

Here are the ingredients for a single large serving; you can easily make multiples if you would like:

1 Avocado

1 Purple Plum (or the equivalent portion of another similar fruit like peaches or nectarines.

1 teaspoon of mayonnaise (I use the low fat variety, but the regular variety is fine)

2 teaspoon of honey mustard dressing (I use O’Charley’s; you can substitute your favorite) 

1/2 pack of ramen noodle soup mix – crushed into small pieces

Preparation:

Avocado:  Cut the avocado in half and discord the pit. Using a spoon remove small chunks of avocado a time and place into a medium size bowl. Or you can remove the peals cut the avocado into small chunks.

Plum:  Cut the plum in half and discord the pit and then the cut the halfs into small pieces. (I find the easiest way to do this is to cut the plum half into thin slices in one direction and then turn it 90 degrees and cut it into thin slices in the other direction.) Add The plum pieces to the bowl with the avocado chunks.

Mayonnaise and Honey Mustard Dressing: Add the mayonnaise and the honey mustard dressing to the bowl with avocado and plum pieces.

Ramen Noodles:  Start with one 3 oz. package of ramen noodle soup. Without opening the package, use a large spoon to pound the ramen noodles into small pieces. Open the package and remove the flavor packet. Divide the crushed ramen noodles pieces in half and use one portion for the recipe.  (If you decide later that you would like the guacamole extra crunchy, you can get add up an additional quarter of the noodle pieces.). Add half of Ramen noodle pieces to the bowl.

Mix:  Using a large spoon gently mix the ingredients together thoroughly while trying not to reduce the avocado chunks to a paste.

Eat and Enjoy:  I usually eat this guacamole mixture right away. Whatever you do, don’t wait until ramen noodle pieces get soft and longer crunchy.
